Shrimp rice is served as the main course, for dinner or lunch, as per preference.
400 g fresh shrimp
1 cup rice with long grain
1 large onion
2 cloves of garlic
2 canned tomatoes
50 ml white wine
4 tablespoons oil
Method of preparation
Store shrimp in a pot with boiling water and salt, about 3 minutes. Then, the shrimp completely cleaned is cut into 3-4 pieces.
Chop the onion and pepper very, very thinly. Heat vegetables in hot oil until softened well. Add the tomatoes crushed with a fork and continue to heat until the oil rises above the vegetables.
Add the crushed garlic and the wine and boil until the wine is completely evaporated and the oil separates again. Put vegetables on a plate.
In this pan, over vegetables, add the rice and 3 cups of water, then put the lid and leave to very low heat until the rice is completely boiled and the soup is absorbed (about 15-20 minutes).
Taste with salt and pepper, then add the chopped vegetables and shrimp over rice. Serve hot rice.
